SIDES: Heart-shaped fondant potatoes
@crowdedkitchen Heart-shaped fondant potatoes 🫶 The perfect fancy (but surprisingly easy) side dish to try this Valentine’s Day! Don’t get rid of the potato scraps – chop them up and roast, use in a hash or make mashed potatoes 🥔 Bookmark the RECIPE below 👇 Heart-Shaped Fondant Potatoes (4 servings) Ingredients: 4-5 large Yukon gold potatoes, sliced into 1” rounds Avocado oil (or another high heat oil) Salt and pepper to taste 4-6 tbsp butter (regular or vegan) 8-10 cloves garlic 4-5 sprigs each of rosemary and thyme 1 cup vegetable stock Heart shaped cookie cutter (I linked to ours on our Amazon page, link in bio) Preheat oven to 425˚F. Slice potatoes into 1” thick rounds. Use a small heart cookie cutter to cut out the hearts. Place the potatoes in a bowl of cold water and soak for 15 minutes, then pat completely dry. Meanwhile, heat avocado oil in a skillet over medium-high heat. Reduce heat to medium just before adding in the potatoes. Add in the potatoes and sear for 3-5 minutes on one side, until golden brown and crispy. Season with salt. Flip the potatoes over, season with salt and sear for another 3-5 minutes, until golden brown and crispy. Using tongs and a paper towel, soak up as much of the frying oil as possible (turn off the heat for this step). Return to medium heat and add in butter, garlic, herbs, salt and pepper to taste. Heat the butter until foamy and hot, but do not brown it. Baste the potatoes with butter. Pour in vegetable stock and place in the preheated oven for 15-20 minutes, until completely tender on the interior. Enjoy! #potatoes #valentinesday ♬ original sound – Crowded Kitchen

Transfer to a 9×9 inch tray lined with parchment paper and press it evenly. 4. Pop in the freezer for 20 minutes or until firm. 5. Use a heart shape cookie cutter to make heart shaped truffles and transfer to a tray or plate lined with parchment paper. Pop in the freezer for 20-30 mins or until set. Re roll the scrap and repeat the same procedure to make more hearts. 6. Melt dark chocolate + coconut oil in the microwave in 30 seconds intervals, stir well in between each interval until completely melted and smooth. 7. Dip each heart truffle in the chocolate to cover completely, use a fork to let any excess chocolate to drip off. Repeat with the rest. 8. pop in the freezer just for 5 minutes. 9. Melt white chocolate, add few drops of red food gel colour and drizzle on top of each truffle. Sprinkle some red velvet cake dusting or cake crumbs.
