Cold batter and ingredients help prevent the fritters from absorbing too much oil while frying, resulting in a crispier exterior. Place the batter in the fridge for 15-30 minutes before frying. You can also use cold water or cold milk in your batter mix to help keep the temperature low. This ensures the fritters cook quickly on the outside while remaining light and crispy.

2. Add cornstarch or rice flour

To improve the crispiness of fritters, consider adding cornstarch or rice flour to your batter. These ingredients create a light, crispy coating by absorbing less oil and creating a crispier texture once fried.
